Production is operated manually and takes place under the supervision of experienced brewers. The process is slow and natural to ensure that as many vitamins, mineral salts and micro-elements, and most of all, sugar as possible can be obtainedfrom the entire malt. After adding selected yeast cultures to a single-brewed beer portion and upon leisurely fermentation, maturing and calm beer clarification follows.
Stara Zajezdnia in Krakow specialises in brewing bottom fermentation beer (pale, dark and honey beer) as well as top fermentation beer (pale wheat beer). Seasonally also flavoured beers are made - apple beer, ginger beer, plum beer and others.
