Our mini brewery was established in 2012. This is the result of DeSilva’s cooperation with the Czech company “M. B. S. Mini Brewery System S.R.O.’ Our mini brewery includes, among others: ice water tank (capacity 28 hl), brewhouse – 10 hl (mash and brewing vat, filter tanks, whirlpool vat), tank fermenters – 4 pcs of 20 hl each, lagering tanks – 10 pcs of 20 hl each and retail tanks – 2 pcs of 10 hl each. Mashing is carried out by infusion, it is temperature controlled (step mash), while fermentation takes place in closed tanks (both upper and lower fermentation).
Our brewers
Mirosław Robak – Main Brewer of Stara Zajezdnia since its inception, i.e. since 2012. He has always been fascinated with beer, as evidenced by his first self-brewed beer as early as 2003. He graduated from the University of Agriculture with a Master of Science degree in food technology. He did his internship at Kompania Piwowarska S.A. and Coca-Cola, while he gained his professional experience, among others, at PZZ Krakow S.A. and Phillip Morris Polska. Since 2012, he has been involved in the construction of the brewery. He created and programmed brewing processes from scratch. He was responsible for creating a tax warehouse. Privately, he is a lover of American hops and high bitterness in beer.
Our brewers
Filip Jaworski – Deputy Chief Brewer of Stara Zajezdnia, graduate of Secondary School No. 2 in Olkusz, obtained higher education at the Jagiellonian University, in the field of sociology. He became interested in home and industrial brewing at the beginning of his studies. Brewing beer at home was only an introduction to his further professional career. Then the interest in brewing evolved, interest in beer sensorics began and in 2018 he became a certified beer judge. In the meantime, in 2017, he started his adventure in Stara Zajezdnia, where he was soon promoted to the current position. Currently, apart from working in Stara Zajezdnia, Filip runs a beer tasting and sensory workshops.
Awards
After many years of trial and error, failures and small successes, sweat, tears and fatigue, we have been appreciated! First, in 2017, at the Polish Brewing Congress, our light beer received a bronze medal, while two years later (in 2019) our biggest gem – wheat pear – received a gold medal! It is thanks to such moments that all the effort put into by our staff begins to make sense and all the voices and praise from our guests drive us to further, increasingly hard work. The brewing process
Our Beers
The main motto of our mini brewery is to create a natural product, without chemicals and preservatives. Our beers are always unfiltered and unpasteurized. Our beer offer is a mixture of classic beers with original variations. We want everyone to be able to find something for themselves when they decide to enjoy our beer. In our brewery, as in our kitchen, there is a very important rule – seasonality. Following the trail of this ideology, in Stara Zajezdnia Krakow by DeSilva you can taste from 6 to 10 types of beer every day. Depending on the season, you can try Apple beer (in summer) or Plum beer (in winter). You will also find classic Lager, Wheat or AIPA, but also less common items, such as Cherry Sour or American Wheat. Our beers are also the work of our guests. In 2018, the project “You too can become a brewer of Stara Zajezdnia” was created. Thanks to this competition, we managed to create, respectively: in 2018, Wheat Pear beer (our absolute hit and winner of a gold medal at the Polish Brewing Congress) and in 2019, AIPA Pineapple beer, which offhand became the TOP5 best-selling beers in the history of Stara Zajezdnia. The year 2020 due to the pandemic stopped the third edition of the competition, and if circumstances allow, in 2021 the competition will certainly take place.

LIGHT BEER – Pilsen type 4.5% alc., 12% weight extract
Bottom-fermenting beer, for the production of which malts such as Pilsen, Munich and caramel were used. They give the beer a characteristic gold color and detectable sweet malty flavors, complemented by the herbal hop aroma, giving an intense bitterness at the end. The beer is crisp, refreshing and semi-dry. Unfiltered and unpasteurized beer. Serving temperature 5 – 8 °C.
DARK LAGER - 5% alc., 13% weight extract
Bottom-fermenting beer, for the production of which malts such as Pilsen, Munich, caramel and roasted malt, were used. They give the beer a characteristic dark color and caramel and coffee hints, complemented by a delicate hop bitterness. Unfiltered and unpasteurized beer. Serving temperature 5 – 8 °C.
WHEAT – 4.5% alc., 12% weight extract
Top-fermenting beer made from wheat and Pilsen malts. They give the beer a characteristic turbidity and moderate maltness. In the background, you can feel the delicate hoppy and clove-banana aroma, derived from the use of a special strain of yeast. Unfiltered and unpasteurized beer. Serving temperature 2 – 6 °C.
AIPA - 6% alc., 15% weight extract
Top-fermented beer brewed with four types of malt: Pale Ale, Munich, wheat, and Carapils. It contains a high amount of American hops, which impart a distinct bitterness and an intense citrus-resin aroma. Cold hopping further enhances its fruity character. The beer is unfiltered and unpasteurized. Serving temperature: 8 – 10 °C.
PEAR WHEAT BEER - 4,5% alc., 12% weight extract
Top-fermented beer brewed with wheat and Pilsner malts, which give it a characteristic haze and moderate maltiness. The addition of a carefully selected blend of natural pear juices imparts a refreshing sweet-and-sour flavor. In the background, there is a subtle hoppiness and a clove-banana aroma from the special yeast strain used. The beer is unfiltered and unpasteurized. Serving temperature: 2 – 6 °C.
AIPA PINEAPPLE - 5% alc., 15% weight extract
Top-fermenting beer, for the production of which four types of malts were used: Pale Ale, Munich, wheat, Carapils. High content of American hops, giving the beer a pronounced bitterness and intense citrus-resinous aroma. For the production of this beer, we use only natural, cold-pressed pineapple juice. Because it is a juice, it is characterized by density and sweet aroma, unusual in everyday pineapple nectars available on the market. Cold hopping additionally intensifies its fruity character. Unfiltered and unpasteurized beer. Serving temperature 8 – 10 °C.
DARK BEER ON BUCKWHEAT HONEY - 5% alc., 13% weight extract
Bottom-fermenting beer, for the production of which malts such as Pilsen, Munich, caramel and roasted malt were used. They give the beer a characteristic dark color and caramel-coffee hints. The addition of buckwheat honey gives the beer a distinct honey sweetness, complemented by delicate, hop bitterness. Unfiltered and unpasteurized beer. Serving temperature 5 – 8 °C.
APPLE BEER - 4% alc., 12% weight extract
Bottom-fermenting beer, for the production of which malts such as Pilsen, Munich and caramel were used. They give the beer a characteristic gold color and moderate maltness. The addition of carefully selected composition of natural juices, only from Polish apples, gives the beer a refreshing sweet taste. In the background there is a delicate hop bitterness. Unfiltered and unpasteurized beer. Serving temperature 5 – 8 °C.
HONEY BEER – 4.5% alc., 12% weight extract
Bottom-fermenting beer, for the production of which malts such as Pilsen, Munich and caramel were used. They give the beer a characteristic gold color and moderate maltness. The addition of linden honey gives the beer a distinct honey sweetness. In the background there is a taste of delicate, hop bitterness. Unfiltered and unpasteurized beer. Serving temperature 5 – 8 °C.
PLUM – 4.7% alc., 13% weight extract
Bottom-fermenting beer, for the production of which malts such as Pilsen, Munich, caramel and roasted malt were used. They give the beer a characteristic dark color and caramel and coffee hints, complemented by a delicate, hop bitterness. For its production, we use selected juices from Polish plums, originating not from anywhere else, but from Łącko. It is right to associate with Łącka slivovitz. Unfiltered and unpasteurized beer. Serving temperature 5 – 8 °C.
AMERICAN WHEAT - 5% alc., 13% weight extract
Top-fermenting beer, for the production of which malts such as: Wheat, Pale Ale, caramel were used. Light, refreshing, with a sweet and sour taste of wheat beer, with low bitterness and rich citrus aroma from American hop varieties. Wheat beer in the American version does not have typical for classic German Hefeweizen beers banana and clove flavors. It is fermented with yeast with a pure profile, which allows to expose the magic of aromatic American hop varieties. Unfiltered and unpasteurized beer. Serving temperature 8 – 10 °C.
CHERRY SOUR ALE – 4.5% alc., 13% weight extract
Top-fermenting beer, for the production of which malts such as: Pale Ale, Munich, caramel were used. They give the beer a characteristic, pleasant, malty base. The addition of natural, cold-pressed cherry juice gives the beer a refreshing sour taste with a distinct cherry aroma and deepens the ruby color. The delicate aroma of Polish hops can be felt in the background. The beer, thanks to its acidity and fruitiness, makes an impression of very light and is perfectly drinkable. Unfiltered and unpasteurized beer. Serving temperature 5 – 8 °C.
